Tomato Rice/Thakkali Sadam



Ingredients:
Basmati Rice - 2 cups
Wine Tomatoes - 3 ripe medium-size
Red Onion - 1 medium finely chopped
Roast-grind:
Coriander seeds - 1.5 tbsp
Chana dal - 2 tbsp
Red chillies - 5 or 6
Fenugreek seeds - 1/2 tsp
Tempering:
Mustard seeds- 1/2 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Green chillies - 3
Asafoetida/hing - a pinch
Turmeric powder - 1/4 tsp
Curry leaves - a few
Cilantro - 1/2 cup
oil  - 2 tbsp
Salt 


Preparation:
In a pan add chana dal, coriander seeds, redchilies and fenugreek seeds ( add the fenugreek last while other ingredients are almost roasted).Do not add oil to it, roast it until an aroma comes and grind it to a fine powder.
Cook the rice with a bit of salt to taste.
Heat the oil and temper mustard seeds and urad dal. Add the chana dal, green chillies,and chopped onions and saute for about 2 to 3 mins.Then add the turmeric, hing and the curry leaves. Fry for another minute or two.Add the above grind powder and fry for another 3 to 4 minutes.Now add the chopped tomatoes,salt and mix well. Add cilantro to it and saute. Let it cook for couple of minutes until the tomatoes are well cooked. Do not add water.
Now add the cooked rice keep it in a low flame, mix it well do not make it mushy.
Stir well until blended well and serve hot with raita, Chutney or pickle.
