Achinga mezhukkupuratti ( Long Beans Stir fry)



Ingredients
Long Beans or achinga – 1 bunch
Red Chili Powder – 1 1/4  tsp or more if you like it hot
Turmeric – 1/2 tsp
Salt – as needed
Garlic – 4 numbers
Shallots / Small Red onions – 5
Curry leaves – 2 sprigs
Oil


Preparation


Cut the long beans into small one inch pieces. Wash it and boil it in a pan or clay pot with adequate water, salt and turmeric powder. Cook it well , not mushy.Mean time mince the garlic and shallots. Add oil in a flat pan, when its hot add the minced shallots, garlic, chili powder and curry leaves to it,saute till nice and aromatic.
Add the cooked beans to the pan and fry around for about 10 minutes till the flavors blend and the beans becomes slightly crisp.Serve hot with rice.
