Kerala Chicken Fried Rice




Ingredients

 Basmati rice – 3 cups
 Chicken pieces – 2 cups
 Red Onion, thinly sliced – 1
 Spring Onions, finely chopped – 1 Bunch 
 Carrots, finely chopped – 1/2 cup
 Green Beans, finely chopped – 1 cup
 Green Peas – 1/4 cup
 Garam masala - 1/4 tsp
 Chili Powder -1 tbsp
 Turmeric Powder -1/2  Tsp
 Cinnamon stick - 2 medium
 Star Anis - 1
 Cloves -  4
 Cardamom - 3
 Ginger Garlic paste - 1 tbsp
  Lemon juice -1 tsp
  Salt to taste
  Oil 
  Soy sauce – 2 tbsp
  Green Chili sauce – 2 tsp
  Salt – to taste
  Black Pepper Powder – as required

Preparation

 Wash and soak the rice for 30 minutes.Heat oil in a pan add the spices like cinnamon,cloves,cardomom,star anis and saute. Add the drained rice to it with enogh water to cook. In another pan cook the vegetables like peas, beans and carrots.Drain the water from the vegetables after its cooked. Marinate the chicken pieces with chili powder, turmeric powder , lemon juice,and crushed pepper for 30 minutes.Heat oil in a heavy bottomed pan and fry the chicken pieces 70 % both sides. Add the sliced onions to it,saute till golden brown add the ginger garlic paste to it and saute for another minute . Add the veggies and garam masala to it. Then add the sauces to it and mix well. Now add the cooked rice and combine it well. Add salt and pepper powder as required. Marinate it with spring onions. Serve warm with Raita.
